Here, Oloroso has been blended with very old Pedro Ximénez, which gives it just a hint of sweetness. There is so much going on in the glass; immediate notes of figs and raisins more to chocolate, toasted nuts, vanilla cake, turkish coffee and burnt dark sugar. An undertone of lemon zest keeps its zingy.

ABOUT THE VINEYARD

Valdespino operate from the city of Jerez de la Frontera in the Cádiz municipality of Spain. The bodega dates back to 1624, and is named after Alfonso Valdespino, a knight that fought for King Alfonso X and was granted land as a reward. The business has been under the control of the Estevez family since 1999, and continues to specialise in VOS. With over 750 hecatres of growing space in the region, Valdespino is undoubtedly a leading light in the industry.
